Gluten-free rolls with flaxseed and lupin flour

🛒 Ingredients (for 6 rolls of approx. 100 g each)

  • 80 g lupin flour
  • 60 g Bio Flax Flaxseed (ground or whole)
  • 200 g cottage cheese
  • 5 eggs
  • 40 g olive oil
  • 1 teaspoon baking powder
  • ½ teaspoon Kłodawa salt
  • 100 ml sparkling water
  • 1 teaspoon seasoning: dried tomatoes with garlic and basil (or just basil)

🍴 How to prepare?

  1. Preheat the oven to 180°C (top and bottom heat).
  2. In a large bowl, add all ingredients: lupin flour, flaxseed, cottage cheese, eggs, olive oil, water, spices, salt, and baking powder.
  3. Mix everything into a uniform batter – it will be quite sticky, which is normal.
  4. Using a silicone spatula or wet hands, shape 6 rolls and place them on a baking sheet lined with parchment paper.
  5. Bake for about 30 minutes – until golden and springy.
  6. Remove and cool on a rack – best served slightly warm!

  • Grind flaxseed just before use – you’ll preserve more nutrients.
  • Store rolls in an airtight container – they will stay fresh for 2–3 days.
